These mid-week brownies are not your “special occasion” recipe. This is your “oh-crap-it’s-only-Wednesday-I-need-something-sweet-in-my-system-asap” recipe!
Jump to RecipeThis is super simple and only takes 15 minutes of your precious mid-week time. But you do need a few of the ‘healthier’ ingredients to make this magic happen.
I made them sans gluten, the infamous devil of all things edible! However, fun fact, I am not against gluten anymore! Been there, done that and I refuse to deprive myself of sourdough bread and cookies anymore. But I also happen to be feeling better when my everyday food is low in the big G. Also the texture of alternative flours is so much lighter and fluffier, so I naturally gravitate towards them.
I think my favourite is still good old almond flour. But I am easily tempted with newer contestants, like cassava flour! This recipe calls for a mix of almond and coconut, I make sure I always have both in my pantry, as they work wonders in different concoctions.
Takeaway for today: It’s absolutely ok to eat healthy and still consume gluten. It’s also absolutely ok to avoid it if that floats your boat without being obsessive about it. If you haven’t figured out your relationship with gluten yet, hit me up! It’s one of my favourite subjects of all time!
Mid-Week Brownies

1 Cup Almond Flour
1 Cup Coconut Sugar
1 tbsp Coconut Flour
½ Cup Raw Cacao Powder
3 Medium Eggs
2 tbsp Melted Butter
1 tsp Vanilla Extract
½ tsp Baking Soda
½ tsp Baking Powder
¼ tsp Sea Salt
Directions
- Preheat the oven to 180°C
- Line a small baking dish with greaseproof paper
- Combine all ingredients and mix well – the batter should be thick and sticky!
- Transfer the mixture into the prepared dish and bake for around 30 minutes, or until the middle bit settles
- Remove from the oven and leave to cool for a while
- Cut into squares and destroy all of them while watching Netflix and celebrating the impending Thursday (or, you know, be reasonable and just have one… or two!)
Notes
- Coconut flour can be substituted with 1.5 tbsp almond flour
- Chocolate chips make an awesome addition!
