Simple Sunday Frittata – no better way to begin the end of the week!
Jump to RecipeLazy Sunday mornings are not to be messed with. The last breakfast before the week begins should be just a little bit special. But not too labour-heavy ‘cos you know, “lazy” is the keyword here!
This is exactly where frittatas come in, super easy and just a little bit fancy. And the best part is you can use just about any ingredients you can find in your fridge.
Some carbs would be good as a base – sweet potato, squash, white potato… These all work fabulously well. Then literally ANY veggies: mushrooms, tomatoes, peppers, celery, carrots, courgettes – the list is endless! I challenge you to name a vegetable that doesn’t work in this dish! DM me if you find one! Let’s also not forget about your greens – spinach, chard, kale… YUM!
On the slightly less healthy side, you could add some CHEESY GOODNESS! Again use whatever you have – feta or cheddar are my faves. As a special treat, or just because your carnivore side is calling, bacon and sausages make yummy additions too!
You can make it on the stove or in the oven. I have recently fallen in love with my skillet – it works miracles when it comes to frittata mastery. However, you’ll be fine with a pan and a standard oven dish. You should totally put a skillet on your shopping list though. It’s a game-changer!
So, without further ado, put your creative hat on and let’s make some Sunday Frittata perfection. Below is what I found in my fridge today…
Simple Frittata

1 tbsp Butter
4 Large Eggs
1 Small Sweet Potato
½ Red Bell Pepper
½ Medium Onion
4 Closed Cup Mushrooms
80g Feta Cheese
1 Cup Spinach
2 Strips Streaky Bacon
- To Taste
Salt, Pepper, Spices to your liking (I loooove Nigella Seeds)
Directions
- Chop all the veggies and crumble the cheese
- Pre-heat the skillet on the stove
- Sauté the onion in butter until clear for about 5 minutes
- Add the veggies and lightly cook until soft
- Add salt, pepper and spices
- Transfer the skillet to the oven and bake for approximately 20 minutes (until eggs are set and your frittata is starting to brown)
- Serve with love and enjoy the rest of your Sunday! ❤️
Notes
- Remove feta to make it paleo-friendly (I wouldn’t cos it’s freakin delicious!)
