I mean, it’s basically just bananas, eggs, butter, and flour. 😉 I add a few other bits and bobs, cos, why not? But it is such an easy recipe to play around with – there’s room to do as you please!
When I first arrived in this country, banana bread very quickly became one of my firm favourite discoveries in the UK culinary landscape. Naturally sweet, filling, and oh, so delicious. And to make things just a little fancier – enter banana bread muffins!
Low carb, protein and fibre rich, gluten and grain-free. They will without a doubt become one of your guiltless go-to staples.
They work great as an afternoon treat, with your breakfast coffee, or as an after-dinner dessert with ice cream! The possibilities are endless!
Banana Bread Muffins

3 Ripe/Overripe Bananas, Mashed
4 Medium Eggs
¼ Cup Coconut Flour
⅓ Cup Unsalted Butter, Melted
150g Walnuts
1 tbsp Cinnamon
¼ tsp Salt
½ tsp Baking Soda
¼ Cup Honey
Directions
- Preheat the oven to 175°C
- Lightly toast the walnuts in a pan without oil
- Mash the bananas with a fork until smooth
- Add the eggs, melted butter and honey
- Combine all the dry ingredients and add to the mix
- Mix all the ingredients together in a bowl, making sure there are no lumps remaining
- Place some cupcake cases in a muffin tray, and add your mix into each case
- Bake for approximately 40 minutes, or until browned on top
Notes
- Works well without nuts
- Super ripe bananas are best, however, you might want to reduce the amount of honey, as the darker they are, the sweeter the result
- This recipe works equally well as a standard banana bread – just use a small loaf tin instead.
